pico scope or pico data logger can detect from the sensor that i need to measure out the speed and torque for induction motor. may i know what sensor that can be used?

For speed, there are analog tachometer generators and digital devices that may be called pulse tachs or encoders.



For torque, there are torque transducers or load cells.



For testing motors, the speed and torque sensors are usually part of a dynamometer. It is difficult to add torque sensing between a motor and an existing mechanical load, but there are shaft torque sensors that can be added.
